Local Doctor aids children in Guatemala

Dr. Ellen Coburn
Vancouver’s Dr. Ellen Coburn has made five trips to Guatemala to the Mayan village of Huixoc to open a clinic and provide medical services. During her first trip in 2002, she realized that medical care alone was not enough to help this remote mountain region escape an ongoing cycle of poverty, poor health and unemployment. After consultation with the community, the project expanded its scope to support several projects in Huixoc, including development of a junior high school. With support of many in the Vancouver community, she has seen this dream move steadily towards reality. Huixoc now has a junior high school, and 30 eager students are enrolled in the Grade 7 class. Trafalgars Bistro is proud to count Dr. Coburn as a friend and to support this worthwhile charity. To learn more, go to http://www.mayanproject.org/

Fall menu stays true to traditions

After 10 years serving guests at “the front of the house” Trafalgars Bistro co-owner Stephen Greenham finds the best part of his job is welcoming back the many familiar faces over the years who now count themselves as regulars.

For Chef Chris Moran, who has been the creative force at the “back of the house” for most of the last decade (he began briefly as sous chef before being promoted to head chef), the restaurant’s enduring popularity is a result of “staying true to what our clientele knows us for and satisfying their appetites for quality ingredients and culinary techniques.”

Trafalgars Bistro has now marked another season with a satisfying new menu. Here’s what’s new on the daytime menu for fall:
• Crock pot lamb shoulder shepherd’s pie
• Smoked sockeye salmon and scrambled egg bombe
• Grilled vegetable and smoked bocconcini lasagna

The elegant fall dinner menu, served Monday to Saturday from 5 pm features several new appetizers and entrees, including:
• Seared giant scallop and tempura vegetables
• Yam and goat cheese samosas with Port reduction
• Pan roasted Ling Cod and tomato-ginger bouillabaisse
• Whiskey glazed Wenzle duck breast and orange peel lentils
