Head Chef Chris Beltrano's love of fresh and local ingredients is on display in the bistro's adventurous menu that uses a simple, but sophisticated culinary styles to create cuisine that is truly modern French. In all cases, this is delicious food meant to be leisurely enjoyed with your closest friends and family.

Trafalgars Bistro offers a three-course dinner menu for $34 per person with matching wine flights available for an additional charge.

             

SUPPLIERS

At Trafalgars Bistro we takes our meat & produce very seriously. Out of tremendous respect for our customers, the planet & it's animals, we ensure that all of our meat is unmedicated & free-range, our seafood adheres to the Ocean Wise protocol, and our produce comes from British Columbia whenever possible. We are proud to introduce the following suppliers whose products are currently on our menu:

Cherry Lane Farms (Richmond). With great excitement & anticipation we launched our farm-to-table program in the spring of 2010. Our Trafalgars team first met farmer Miles Smart when a group went apple picking on his farm the previous autumn. This young farmer was just beginning his career, picking up where his grandparents left off, and a partnership was eagerly discussed. In the height of the summer harvest, approximately half of our menu items will contain veggies grown by Miles. He farms his land organically by hand, and is as passionate about sustainability, simplicity & seasonality as we are at Trafalgars. Join us in October for our annual Taste of the Harvest where Miles will be on hand to talk about his products & experiences.

Heritage Farms (Fraser Valley) supplies our chicken, they have been raising chicken traditionally since 1957. From their website: "with a consistent approach we take great pride in raising our chickens using extreme care in terms of health, hygiene and diet. Providing them with a controlled climate, clean fresh air and an all-vegetarian healthy feed, ensures the chicken has superb quality and taste. Our basie old fashioned approach to raising chickens:

*Give them ample space to roam freely and grow as they are accustomed to

*Feed them only the highest quality, healthy foods consisting of wholesome grains and vegetables ingredients

*Never us any animal by-products or antibiotics

*Never allow the use of hormones to stimulate growth

*Allow plenty of time to grow naturally ensuring the best quality chicken with that great olf-fashioned flavour.

Island Scallops (Qualicum Beach) provides our scallops. Certified Ocean Wise, this farm is an environmentally sustainable supplier and cultured scallops are an all-natural product. Scallops require clean, rich waters to grow. They feed themselves by filtering the natural microscopic food. No chemicals or fertilizers are added to the ocean, and the farms create habitat for fish and a myriad of other marine organisms

Fraser Valley Duck & Goose (Chilliwack) supplies our ducks. From their site, "Our commitment to our birds is that they will live in a clean, healthy environment. They will be fed whole grains, always have access to clean drinking water, and be housed in free run barns (NO cages!)". All of their products are unmedicated.

Paradise Valley Pork (Alberta). "The Sunderland Family have spent many years perfecting their system for raising free range hogs because they believe that their system is not only good for their hogs, it also produces the best tasting pork." Their hogs are free to roam in large outdoor paddocks which feature water fed mud-holes for summer wallowing, and large straw bedded shelters for year round comfort. The freedom to root and dig in the straw and mud not only results in contented hogs, but assures a quality pork product with a richer more traditional pork taste. Self feeders are strategically placed throughout the paddocks to provide all hogs with ready access to a nutritious vegetable-grained based diet that is free of antibiotics & animal by-products.

Lois Lake Aquaculture (Lois Lake, Sunshine Coast): Certified Oceanwise. No antibiotics, hormones, or other additives ever used. Pacific Steelhead are fed an organically certified diet comprised of fishmeal, fish oil, wheat meal, vitamins, minerals and beta carotene. Feed mimics diet of wild salmonids to ensure the highest quality taste and texture. Hand processed & farm has a zero waste policy.
